Dom's Strukla Recipe (Cottage Cheese Rolls) My Grandparents brought this recipe with them from Yugoslavia.
Dough 6 Cups Flour 2/3 Cup Sugar 1 tsp salt 3 Eggs 2 Cups Water 1 Pound Butter
Melt 1lb Butter in 2 cups of Water over low heat. Just enough to melt the butter. Let Cool. Add 3 slightly beaten eggs. Combine Flour, Sugar and Salt. Then add the Cooled Mixture and combine together with fork. We tried to combine it with an electric mixer and the dough became tough. Please use a fork Knead dough a few times and divide into two. Let it rest while you make the filling.
Filling 4 1.5 lb Containers of Cottage Cheese 9 Eggs 1 Cup Melted Butter ¾ Cup Sugar 1 tsp Salt Fresh Parsley (do not combine) you will add it later. 1 lb Butter (Softened) (do not combine) you will add it later.
Put all filling ingredients in a large bowl and mix lightly. Roll ½ of the dough mixture until paper thin (large rectangular area). We use a large table covered with a cotton sheet (well floured). Spread half of the filling mixture onto the dough. Add fresh chopped parsley and dot with chunks of butter over entire mixture. Roll dough into the center from both sides. Cut into 3 inch squares. Place into baking pan. We use a (13x9x1) metal pan Repeat process for the other half of the recipe. You can bake a pan of them now and freeze the rest to enjoy later. Place into a pre-heated 425 degrees oven. Bake for 30 minutes or until golden brown. Enjoy!!!!!!!!!!!!!!!
